The Dylan Amsterdam occupies a 1617 building on the Keizersgracht, halfway between the Dam and the Rijksmuseum. We counted 40 rooms arranged around a paved inner courtyard, all different: some with exposed beams and period fireplaces, others redesigned in a sleek contemporary style (dark wood, white linen, grey marble bathrooms). The Vinkeles restaurant has held a Michelin star since 2006, set in the 17th-century vaulted cellars, technical French cuisine with Dutch produce. The Occo bar serves cocktails and light bites until midnight in a library setting. From 625 € a night, Booking score 9.4/10 from 257 reviews, which places the address at the top of the Amsterdam pack. Service is discreet, clientele international and calm. A hotel for those seeking the intimacy of a canal house rather than the pomp of a palace ✨

Who is it for?

Who we recommend it to

We recommend The Dylan to couples in their thirties and up seeking a discreet address rather than a big chain hotel. It's a choice for romantic weekends, anniversaries, seasoned Relais & Châteaux travellers who want the human scale and on-site starred table. Families with children will find the atmosphere too hushed, the clientele remains mostly adult and discreet.

The building

Architecture and interiors

The building dates from 1617, former theatre converted into a patrician residence in the 18th century, then into a hotel in 1999. Typical canal house architecture: narrow gabled façade, considerable depth, inner courtyard. Interiors blend period elements (beams, marble fireplaces, vaulted cellars) and contemporary design by Anouska Hempel in the 2000s. Ceiling heights vary by floor, rooms between 25 and 65 m² approx, all with different configurations.

At the table

Restaurants, bar, service

The Vinkeles restaurant has held a Michelin star since 2006, technical French cuisine by chef Jurgen van der Zalm, set in the 17th-century vaulted cellars with open kitchen. Tasting menu 6 or 8 courses, strong wine list in Burgundies and champagnes. The Occo bar offers signature cocktails and light bites (oysters, tartares, cheese boards) until midnight in a library setting with fireplace. Breakfast served in room or in the inner courtyard in fine weather, continental or à la carte.
